The Walnuts Creme Figs Tart is a delicious tart perfect for walnuts lovers. The filling is creamy and the figs give freshness and sweetness.

Ingredients
Prepare the crust
- 1/2 cupalmonds (gr. 60)
- 1/2 cuprice flour (gr. 65)
- 2 tablespoonsmaple syrup (2 cucchiai)
- 1/4 cupwhite beans (paste, gr. 60)
Prepare the filling
- 1 cupwalnuts (gr. 120)
- 3 pinchessalt (fine)
- 1/3 cupwater (ml. 80)
- 1 tablespoonmaple syrup (1 cucchiaio)
- 5 ouncescream cheese (gr. 150)
- 2 ouncespistachio paste (with chocolate, gr. 50)
Assembly the tarte

Preparation
Prepare crust
In the bowl of a food processor chop the almonds until finely ground.
Pour in the maple syrup , the rice flour, the white beans paste and pulse until just combined.
Use moistened fingers to press the crust into the bottom and the sides of a 8” (cm. 20) square tart pan.
Bake for 20-25 minutes at 350F (180°C). Let it cool.
Prepare the filling
In the bowl of a food processor chop the walnuts until finely ground.
Add maple syrup, pistachio with chocolate paste and blend it, adding the water a little at a time.
The quantity of water depens on the density of the pistachio with chocolate paste. Mine was really compact. The filling shoud be smooth and not liquid.
This is the Pistachio with chocolate paste that I used.
Add creme cheese and blend until well mixed.
Assembly the tarte
Spread the walnuts cream into the bottom of the cooled tart shell (you may have 2 or 3 tablespoon left over to eat like pudding!)
Top with a layer of fig divided in two parts.
Chill the walnuts creme figs tart until firm enough to slice, at least 2 and up to 8 hours.
Suggestions
You can buy ready-made white beans paste. Otherwise you will find the recipe to prepare it yourself in my blog, follow me and you will be able to prepare this super paste.
You can use your favorite Pistachio paste with chocolate or also pistachio paste.
