Fried Pumpkin Parmigiana

The Fried Pumpkin Parmigiana is a really tasty recipe, that we really love. The classic Parmigiana is with eggplants, but it will be delicious also using other types of vegetables. I usually start cooking Bolognese meat sauce a couple of hours before preparing the Parmigiana, in the meantime I fry the pumpkin and at the end I put all the ingredients together. Let’ start cooking!

Ingredients

Prepare the Classic Bolognese meat sauce

  • 5 cupsmeat sauce (Classic Bolognese meat sauce, kg. 1,250)

Prepare fried pumpking

  • 8 cupspumpkin (butternut net weight, seedless and peel, kg. 1)
  • 3/4 cupflour (00, gr. 100)
  • 4eggs
  • 2.5 cupsvegetable oil (for frying, sunflower oil, ml. 500)

Assembly the Fried Pumpkin Parmigiana

  • 7 ouncesgruyere (thinly sliced, gr. 200)
  • 2 cupsham (baked diced, gr. 300)
  • q.s.salt (fine, q.b.)
  • 3 ouncesparmesan (cheese grated, gr. 80)

Preparation

Prepare the Classic Bolognese meat sauce

Prepare fried pumpkin

  1. Remove seeds, pith and outer skin from the pumpkin.

    Cut the pumpkin with a sharp knife into slices 0,2 inches thick.

  2. Place the flour on a plate and beat the eggs in a medium bowl with a pinch of salt.

    Dredge the sliced pumpkin a little at a time in the flour then dip in the egg mixture.

  3. Fry the pumpkin in hot oil (375F / 190C), cook for 3 minutes on each side.

    Remove with a slotted spoon, and place on a paper towel lined plate.

Assembly the Fried Pumpkin Parmigiana

  1. Pre-heat oven to 350°F (180°C)

    In a baking dish measuring 10 inches in diameter (cm. 26) spread 2-3 tablespoons of Classic Bolognese meat sauce on the bottom of the pan, add a layer of fried pumpkin.

    Then continue to layer in the following order: 2 or 3 pinches of salt, chopped gruyere, diced ham, Bolognese meat sauce and grated parmesan cheese.

  2. Continue making another layer of fried pumpkin and the ingredients as above.

    Now the last layer of fried pumpkin, a layer of Bolognese meat sauce and cover with grated parmesan cheese.

  3. Bake for approximate 30-35 minutes.

  4. Let sit 10 minutes before serving.

Suggestions

The Fried Pumpking Parmigiana will be delicious also using shredded firm mozzarella or shredded Fontina cheese.

If you love pumpkin, you will also love fried pumpkin. Try to taste it with a pinch of salt on the surface. It will taste great!
