Vegan Parsley Mayonnaise

Vegan Parsley Mayonnaise is really easy and super quick to make.

Perfect to go with fries or raw vegetables like I did.

Mayonnaise is one of those really versatile ingredients that can be modified in 1000 ways and I always have a lot of fun trying new ones.

This time the protagonist is parsley, which is never missing in my house!

Ingredients to Vegan Parsley Mayonnaise

2 oz soy milk
3.3 oz corn oil
0.3 oz extra-virgin olive oil
1 pinch salt
1 teaspoon lemon juice
1.7 ounces parsley

Tools to Vegan Parsley Mayonnaise

Chopping Board
Knife
Immersion Blender
Immersion blender glass or tall narrow glass
Bowl

Steps to Vegan Parsley Mayonnaise

▪ Pour the milk into immersion blender glass and start blending.

▪ When it starts to whisk add the corn oil in a trickle without stopping whisking.

▪ Then add extra virgin olive oil, always in a trickle.

▪ While continuing to blend, add lemon juice..

▪ Add the pinch of salt.

▪ Chop the parsley very finely with a knife.

▪ Finally, add parsley and whisk until perfectly incorporated.

▪ Adjust salt if needed.

▪ Move the mayonnaise to a small bowl and place in the fridge for at least 1 hour before serving.

▪ Vegan Parsley Mayonnaise is ready!
