Chicken lollipops

Chicken lollipops are a really tasty recipe that is usually prepared at the BBQ, but if you
you don’t have an outdoor space where you can express your passion, how can you prepare them?

No problem, I don’t have an outdoor space either (although I recently got a BBQ to use at home… Editor’s note), but with a little foresight our Lollipops can easily be made in the oven, hung just like you do on the BBQ

A recipe with simple ingredients that combined together bring joy to the table.

The preparation is certainly not fast, but the end result will be worth all the effort and time spent.

And then, once you set the timer, you can almost forget it…

Ingredients to Chicken lollipops

6 chicken, drumstick, no skin, raw
12 slices bacon
q.s. barbecue sauce
q.s. mustard

Tools to Chicken lollipops

Chopping Board
Knife
Bowl
Brush
Kitchen string
Baking paper
Drip pan
Oven grill

Steps to Chicken lollipops

▪ Turn oven on to 482° in fan mode.

▪ Take the chicken drumsticks and slit them where the thigh is thinnest, to just under halfway in length.

▪ Release the bone by cutting the tendons and removing all residual skin, flesh and filaments so that it becomes the handle for lollipops.

▪ Once you have “freed” the meat from the bone you will have to form a sort of sphere by pushing the meat downwards giving it the appearance of a lollipop.

▪ Remove all the skin and very carefully remove the small sharp bone that you will see protruding.

▪ Take the mustard and brush the chicken drumsticks and wrap each with two slices of bacon.

▪ If the mustard flavor is too strong for you, you can brush the chicken drumsticks with a little extra virgin olive oil and use a very quick rub to prepare:

Salt, pepper, paprika and brown sugar in equal parts.

▪ Now comes the trick to cooking without the BBQ: tie one end of the string to the “handles” of the lollipops and the other to the oven rack so they hang spaced apart.

▪ Put the oven grill with the lollipops hanging in the upper part of the oven while in the lower part put a drip pan with baking paper on top so that the grease that will drip (and it will drip) does not dirty the oven.

▪ Bake for 60 minutes without ever opening the oven.

▪ When it’s 5 minutes away put the barbecue sauce in a small bowl so it’s easy and brush on the lollipops, bake another 15 minutes.

▪ After 15 minutes, brush again with more barbecue sauce and bake for the last 15 minutes.

▪ Once baked let them rest a couple of minutes and serve.

▪ Chicken lollipops are ready.

▪ Enjoy!
