Fresh apples combined with a cinnamon-flavored cream create a wonderful dessert that works every time. The apples are in the dough, but they are added, thinly sliced, on top of the cake just before baking to give it a very nice appearance.

Ingredients

2 eggs
2/3 cup granulated sugar (140 g – 4,90 oz)
1 pinch salt
1/2 cup vegetable oil (100 g – 3,50 oz)
1/2 cup milk (100 g – 3,50 oz)
11/2 cup all purpose (AP) flour (200 g – 7 oz)
1/4 cup potato starch (50 g – 1,50 oz – or corn starch)
cinnamon powder (to taste)
1 teaspoon baking powder for sweets
1 lemon zest (grated)
3 apples
unsalted butter (for the mold)
all purpose (AP) flour (for the mold)
powdered cane sugar

Steps

Soft Apple Loaf Cake recipe is very easy to make.

First, put the eggs together with sugar and a pinch of salt in a planetary bowl (1) and whisk until the mixture becomes soft and fluffy. It takes about 5 minutes. (2).

Gradually add the vegetable oil (3) and milk (4), continuing to whisk.

In a separate bowl, sift together the flour, potato starch (or corn starch), cinnamon and baking powder. Reduce the speed to low and then add the flour mix to the egg mixture a little at a time; continue to mix well just until combined.

Grate the lemon zest (5) and add it to the mixture (6).

Now, peel two apples, cut them into pieces and add them to the dough. Gently mix with a spatula from bottom up being careful not to disassemble the mixture, until you obtain a soft and homogeneous mixture.

Cooking

Preheat oven to 356°F (180°C).

Butter and flour a 10-inch (25 cm) loaf pan and gently pour the dough into it.

Peel and thinly slice the remaining apple and add  lightly, without pressing too much (7) on the cake. Sprinkle with granulated sugar (to taste) (8).

Bake in a preheated oven for about 45 – 50 minutes (mine 45 minutes).

Cooking times vary from oven to oven. To check if it is done, insert a toothpick in the center of the cake. If it comes out clean, it’s cooked. If it’s sticky and moist, the cake isn’t ready yet.

Do not overcook the cake, otherwise it will be dry.

Once cooked, remove from the oven and allow the Apple Loaf Cake cool completely. Once at room temperature, sprinkle with powdered sugar if you want.

Storage

You can store Soft Apple Loaf Cake in an airtight container for up to 3-4 days, but it’s unlikely to last that long.
