Granulated sugar 150 g (3/4 cup 0.33 lbs)
Unsalted butter (softened) 150 g (2/3 cup 0.33 lbs)
Whole milk (lukewarm) 120 ml (1/2 cup 0.25 lbs)
Fresh yeast or dry yeast 20 g (fresh) / 7 g (dry) (2 1/4 tsp (dry )
Large eggs 3
Orange zest From 1 orange
Lemon zest From 1 lemon
Vanilla extract 1 tsp
Salt 6 g (1 tsp)

For the Almond Glaze:

Egg whites 2
Powdered sugar 100 g (3/4 cup 0.22 lbs)
Almond flour 100 g (1 cup 0.22 lbs)
Whole almonds 60 g (1/2 cup 0.13 lbs)
Pearl sugar (optional) 50 g (1/4 cup 0.11 lbs)

Steps


Step 1: Prepare the Dough
In a large bowl, dissolve yeast in lukewarm milk with 1 tsp sugar. Let it sit for 10 minutes until foamy.
Add flour, sugar, eggs, and zest. Mix until a dough starts to form.
Knead for 10-15 minutes, gradually adding the butter and salt until smooth and elastic.
Cover the dough and let it rise in a warm spot for 2-3 hours, or until doubled in size.

Step 2: Shaping the Colomba
Punch down the dough and divide it into two parts — one for the body and one for the wings.
Shape and place in a dove-shaped mold (Colomba mould) or a loaf pan if you prefer.
Let rise again until doubled, around 1.5-2 hours.

Step 3: Almond Glaze & Baking
Preheat the oven to 175°C / 350°F.
Whisk egg whites until frothy, fold in powdered sugar and almond flour.
Spread the glaze over the risen dough, decorate with whole almonds and pearl sugar.
Bake for 40-45 minutes. If the top browns too quickly, cover with foil.

Storage
Keep at room temperature, tightly wrapped, for up to 5 days.
For longer storage, slice and freeze in airtight bags for up to 1 month.
