Ingredients
6 large eggs
3 medium potatoes, peeled and thinly sliced
2 medium red onions, thinly sliced
4 tbsp extra-virgin olive oil (divided)
Salt, to taste

2 tbsp grated pecorino or Parmesan cheese (optional, but traditional in many Sicilian homes)

Steps
Prepare the potatoes
Heat 3 tablespoons of olive oil in a large non-stick or cast-iron pan over medium heat. Add the sliced potatoes with a pinch of salt. Cook slowly for 10–12 minutes, turning occasionally, until soft and lightly golden.
Cook the red onions
Add the sliced red onions to the pan with the potatoes. Continue cooking for another 8–10 minutes, stirring gently, until the onions become sweet and translucent. If the pan gets dry, add a drizzle of olive oil.
Beat the eggs
In a large bowl, whisk the eggs with salt, pepper, and (if using) the grated cheese and parsley.
Combine
Transfer the cooked potatoes and onions into the bowl with the eggs. Mix gently so the slices don’t break too much.
Cook the frittata
