Organic lemons – 8 large
Pure alcohol (95%) or high-proof vodka – 1 liter
Granulated sugar – 700 g
Water – 1 liter

Steps
1. Prepare the lemons
First, wash the lemons thoroughly and dry them completely. Then, carefully peel only the yellow zest using a peeler. Avoid the white pith, because it makes the liqueur bitter.
2. Infuse the alcohol
Next, place all the lemon peels into a large glass jar. Pour the alcohol over them and close the jar tightly. Now, let it infuse for 7–10 days, shaking the jar gently every day to release more flavor.
3. Make the syrup
Meanwhile, prepare a simple syrup. Bring the water to a boil, dissolve the sugar, and then allow it to cool completely.
4. Combine syrup and infused alcohol
After the infusion time, remove the lemon peels by straining the alcohol. Then, combine the infused alcohol with the cold syrup. At this stage, the liquid becomes bright yellow and slightly cloudy—this is normal.
5. Bottle and rest
