Ingredients

  • 11 ouncesladyfingers ((300 g))
  • 2/3 ouncemascarpone ((500 g))
  • 1/3 cupcoffee ((300 g) strong, freshly brewed )
  • 4egg ((220 g))
  • 1/2 cupsugar ((100 g))
  • 1 q.s.unsweetened cocoa powder (for the surface)

Tools

  • Blender / Mixer
  • Bowl
  • Spatula
  • Strainer fine mesh
  • Baking Dish 8×8 inch (20×20 cm)

Let’s go to prepare the tiramisù dessert, first of all start with fresh eggs, carefully separate the egg whites from the yolks ( very important to know is that to whip the egg whites well and very firmly they must not contain any trace of yolk).

Then whip the egg yolks with a hand mixer, pouring in only half of the sugar. As soon as the mixture has become clear and frothy, add the mascarpone cheese, spoon after spoon. When all the cheese is incorporated, you will have obtained a thick and compact cream.

Let’s go to the second step: clean the mixer attachments and beat the egg whites, pouring in the remaining sugar.

Whisk them into stiff peaks until the mixture does not move (when you overturn the bowl). Take a spoonful of egg whites and pour it into the bowl with egg yolks and sugar and stir vigorously with a spatula, to thin the mixture. Then proceed to add the remaining egg whites, spoon after spoon, stirring very gently from bottom to top.

Once ready, place a generous spoonful of cream on the bottom of a 22 x 22 cm = 8×8 inch in baking pan and spread it evenly. Then soak the ladyfingers for a few moments in the cooled coffee, which you will have sweetened to your taste (1).

First on one side and then the other side (2). Arrange the soaked ladyfingers on top of the cream, side by side, to create the first laye (3)r, over which you will spread part of the mascarpone cheese cream(4).

Make sure to level it carefully so that you have a smooth surface. Continue to arrange the coffee-soaked ladyfingers, then add another layer of cream (5).

Level the surface  (6)sprinkle it with unsweetened cocoa powder. Now the Tiramisù is ready but you had to allow it in to the fridge for a couple of hours.

Enjoy it By Lidia !!
