To prepare a tasty and original dish you don’t need to spend a lot of money, you need only a pinch of imagination.
I love buying pork loin, it is cheap and if well cooked it allows you to prepare really special dishes. A few days ago at the supermarket I bought a piece with a few strands of fat: a perfect piece for a succulent roast. So I immediately put myself to the stove to make an original dish different from the usual, a tender roast that I wrapped in a potato cream and wrapped with some crumbly and golden puff pastry, a special second course suitable for Sundays or holidays.

Ingredients

  • 2.2 poundspork loin
  • 3.5 ouncesonions
  • q.s.olive oil
  • 1 glasswhite wine
  • 17.5 ouncespotatoes (boiled)
  • q.s.nutmeg
  • 1 sprigrosemary
  • 1.5 ouncescarrots
  • q.s.salt
  • 2 rollspuff pastry
  • q.s.sesame seeds
  • 1.5 ouncesbutter
  • q.s.black pepper

Rost pork wrapped in puff pastry and potato cream: preparations…

  1. Choose a piece of loin that is not too thin, but that has some strains of fat.

    Chop and brown the onion and carrot with olive oil.

    Tie up the loin and fix the rosemary.

    Put the loin in the same pot and let it brown from all sides.

  2. Pour the white wine, salt, lower the heat and cook over a moderate heat for about an hour.

  3. Boil the potatoes, after 35-40 minutes stick them with a skewer, if they are soft turn off the heat.

    If you have a microwave steamer, steam team for 20 minutes.

    When they’re ready, while they are still hot, pass them with the potato crush them very well with a fork.

    Add butter, salt, pepper and nutmeg. Stir.

    Measure the temperature at the center of the pork loin, when it has reached 143 ºF turn the heat off.

    Move the meat onto a plate and let it cool.

  4. Unroll the puff pastry and distribute the mashed potatoes at the centre. Place the pastry over the loin and cover it with other cream.

  5. Spread over sauce from the pot, which will give flavor and close everything wrapping the piece of meat as in a packet of puff pastry.

    Cut strips from a new roll of pastry and use them as decoration.

  6. Brush everything with beaten egg, sprinkle with sesame seeds and bake in a ventilated oven at 356 º F for about 35 minutes until you get the desired browning.
