  • 3.5 ouncesdark chocolate (100 g)
  • 12licorice root wheel
  • q.s.smarties

Tools

  • 1 Electric hand mixer

Preparation

  1. Preheat oven to 338°F (180ºC) conventional.

  2. In a large bowl, using an electric hand or stand mixer, cream the softened butter and sugar until light and creamy.

  3. Gradually add eggs, one at a time, and mix until just combined; scrape down the sides of the bowl as needed.

  4. Sift flour, cocoa and baking powder for sweets (bicarbonate of soda).

  5. Add to creamed mixture with milk and stir until just combined

  6. Fill each muffin tin 3/4 of the way full with batter. Bake for 18-20 minutes, until skewer comes out clean. Keep an eye on them to avoid burning (or you will obtain dry cupcakes).

  7. Remove from the oven and let them cool.

Filling and decorating

  1. Now, remove the middle of the cupcakes.

  2. You can use a small round cookie cutter, press the cutter into the center of the cupcake and gently twist as you pull the cutter out.

  3. Or, as I did, use an apple corer, pressing the apple corer into the center of the cupcake, then twist it upward and remove the middle cake.

  4. Leave a little cake at the bottom rather than removing the center cake all the way down. This will help your cupcake hold its shape and also give the filling something to rest on.

  5. Lightly warm the Nutella in the microwave and transfer it into a pastry bag, cut off the tip and then dispense the filling into each individual cupcake.

  6. Meanwhile, melt the dark chocolate on the stove (bain marie) or in the microwave.

  7. Once the chocolate has melted, cover with a spoon (or put it into a pastry bag) the top of the cupcakes.

  8. Sprinkle cupcakes with chocolate sprinkles.

  9. Place 2 smarties on each cupcake.

  10. Cut string licorice into 2-inch lengths and use for the spider legs.

Tips and tricks

I opted to dip my cupcakes in sprinkles chocolate, but you could use mini chocolate chips instead or even just leave your frosting plain.
