Ingredients Pumpkin Upside-Down Cake
For the caramelized pears
- 60 gbrown sugar
- 40 gbutter (unsalted)
- 2pears
For the cake
- 300 gflour
- 16 gbaking powder
- 100 gbutter (unsalted, softened)
- 150 gpumpkin (puree)
- 80 gsugar (granulated )
- 3eggs
- 1 teaspoonground cinnamon
- 1 teaspoonfreshly grated nutmeg
- 1 pinchsalt
Preparation Pumpkin Upside-Down Cake With Caramelized Pears
For the caramelized pears
Place the butter and brown sugar in a metal cake pan and heat, stirring over low heat, until melted.
Remove from heat and arrange pears in a circle. Lightly grease the sides of the pan with butter.
For the cake
In a bowl, sift flour with baking powder, add cinnamon, nutmeg and salt.
With beaters, beat butter and sugar on high speed until creamy, about 2 minutes. Gather the cream from the sides of the bowl and add the eggs, beating well.
Now combine the pumpkin puree, whisking until the ingredients are fully combined.
Preheat oven to 350°F.
Spread the mixture evenly over the pears, making sure they are all coated. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out dry.
Let the cake cool for 10 minutes, run a knife around the edges of the cake pan and remove to an upside down serving plate, then gently lift the cake pan off the cake.
Allow to cool completely before dusting with powdered sugar.
