How many times when you had to make dinner, you still had no idea of what bring to the table? To me, although my job is to invent recipes, it happens much more often than you think.
However, when this happens, I always have an a trick up my sleeve: the potatoes!
Potatoes are the pas por tout of every moment of crisis: they are cheap, versatile, and delicious, they are good on their own, but exceptional if enriched by flavors and aromas.
These stuffed potatoes, for example, born as simple ingredients for a salad, have turned into a delicious second course, creamy and streaky, to which no one could say no!

  • 3potatoes (boiled and of medium size)
  • 2.5 ouncessmoked provola cheese
  • q.s.olive oil
  • 5 ouncesham
  • 3 ouncesparmesan cheese
  • q.s.salt
  • q.s.black pepper
  • 1 tablespoonbreadcrumbs

Preparation

  1. To prepare this dish we must first cook the potatoes: I prefer to put them in a microwave steamer, add some water and cook them 20 minutes at 750W, cooked in this way they are drier and tastier.

    If you do not have the steamer, wash them, dip them in a pot with water at room temperature, salt and then boil.

    Depending on the size it will take to cook from 30 to 40 minutes, to evaluate the cooking stick them with a toothpick, if they are soft turn off and drain them.

    Cut the potatoes in half, without removing the peel (which will keep them whole), and gently scoop them with a spoon, placing the part you removed in a bowl.

    Arrange the obtained boats in a greased baking dish with a bit of oil in them.

  2. Take back the part of potatoes you put in the bowl, add the cheese, salt, pepper and sliced ham.

    Mix everything together and fill the potato boats with this mixture.

    Brush with oil, sprinkle with breadcrumbs and cook at 355 º C for 15 minutes or until golden.
