As soon as February arrives, here in Sicily the first summer vegetables begin to peek into the counters of the grocery store and I can not resist the temptation to buy them. I really don’t like the winter, so the first warm rays of mid-February and the slightly longer days make me think of the upcoming spring and the much desired summer. This is why I have been devoting myself to summer recipes since mid-month, which I would really like to make all year round.

This recipe of eggplant rolls with ham and cheese, a light recipe as long as you do not eat it all by yourself is perfect to inaugurate the summer that is coming.

A simple and tasty recipe, which already takes us to the summer and spring and that will win everyone over for taste and simplicity!

But let’s go to the kitchen, I’ll tell you how to prepare it!

Ingredients

2 aubergines (big)
5 ounces cooked ham
2 ounces provola cheese
1 ounce parmesan cheese
q.s. breadcrumbs
q.s. olive oil

Steps

To grill the eggplants, slice them in slices a little less than 1\3 of an inch thick (less then 1 cm). Heat a cast iron grill and cook them on one side until they are soft, salt slightly and collect in a dish. Be careful not to break the slices during cooking.

Arrange the slices on a surface, stuff with ham and cheese and roll them tightly, forming cylinders.

Brush the bottom of a baking dish with olive oil, sprinkle with breadcrumbs and arrange the rolls inside, tight together.

Sprinkle with plenty of Parmesan cheese, breadcrumbs and oil.

Cook 10-15 minutes at 355 ºF, remove from the oven as soon as you have obtained the desired browning and serve hot and stringy.
