70 g Parmesan (grated)
250 g flour
100 ml water
40 g extra virgin olive oil
1/2 teaspoon salt
1 egg (for brushing)

Steps

To make savoury biscuits, I first need to make the dough, then shape the biscuits, and then bake them straight away

PROCEDURE

Put all the ingredients in a bowl and mix. Shape the mixture into a ball. Don’t worry if it isn’t very soft. Roll out the dough until it is thin, then cut it into strips and shape them into rectangles of your preferred size. Prick each biscuit with a fork. Brush the biscuits with egg and sprinkle with a mixture of herbs or spices. Bake at 180°C for about 15 minutes, or until golden and crisp, then leave to cool.
