BIMBY SHORTCRUST PASTRY
Start by preparing the shortcrust pastry. Place the sugar in the Thermomix bowl. Mix for 15 seconds at speed 10. Place the butter, flour, egg, pinch of salt, and 1 teaspoon of vanilla extract into the bowl. Mix for 30 seconds at speed 5. Transfer the dough to the work surface. Form the dough into a ball. Wrap it in cling film and refrigerate for 1 hour. Preheat the oven to 180°C. Take the shortcrust pastry and remove the cling film. Place the shortcrust pastry between two sheets of parchment paper. Using a rolling pin, roll out the dough to a thickness of 5 mm. Using cookie cutters, cut out the shortcrust pastry into the desired shapes. Arrange the cookies on a baking sheet lined with parchment paper. Bake for 10-12 minutes (180°C). Carefully remove the pan from the oven and let the cookies cool completely on a wire rack.
BIMBY ROYAL ICING
Place all the ingredients for the royal icing in the Thermomix bowl. Mix for 40 seconds at speed 6. Pipe the royal icing into a piping bag and decorate the cookies.
