1 chicken breast
2 sausage
3 slices scamorza cheese
6 brussels sprouts
1 carrot
5 cabbages
1/2 red onion
2 pinches thyme
2 pinches salt
2 pinches pepper
3 teaspoons extra-virgin olive oil


1-With a good sharp knife, make three horizontal cuts across the surface of the chicken breast, being careful not to go all the way through the meat; the chicken should remain intact. Oil, salt and pepper the entire chicken.

2-Drizzle an ovenproof dish with oil and place the chicken inside.

3-Remove the casing from the sausages, take some of the meat and insert it inside each cut, then insert the scamorza slices.

4-In a bowl place the brussels sprouts cut in half, the carrots divided into quarters, the previously boiled cabbage florets and the onion in wedges.

5-Season with oil, salt and pepper and thyme, mix well and pour and distribute the vegetables around the chicken.

6-Drizzle with oil and bake the STUFFED CHICKEN BREAST, at 200° for 35-40 minutes, until the chicken is cooked and the juices run clear when pierced with a knife, serve hot.. Enjoy!
