- 1.3 poundssweet potatoes
- q.s.water
- q.s.salt
- q.s.extra-virgin olive oil
- 2 sprigsrosemary

Preparation
▪ Peel the sweet potatoes and cut them into small pieces, the smaller they are, the faster they will cook.
▪ Put the potatoes in the pot and add water to cover them and cook for 1 hour.
▪ Coarsely chop the rosemary.
▪ When the potatoes are cooked and the water has reduced by a third, use the immersion blender to make the soup.
▪ Add the rosemary and season with salt.
▪ Serve and finish with a drizzle of extra virgin olive oil and a small sprig of rosemary.
