Chicken and Veal Salad is a complete dish with everything you need, tasty and really satisfying.
The preparation is really very quick and easy.
I usually make this recipe whenever I have leftover meat from my Kebab, however the last time I made it it was literally completely wiped out so this time my salad is made specifically, not with leftovers.
I find the chicken and veal pairing to be very enjoyable, both white meats with little to no fat, with the addition of the right ingredients they bring a great salad to the table!
It’s perfect for a light lunch whether you’re at home or at the office.

Steps to Chicken and veal salad
▪ Cut the chicken breast and veal slices into strips.
▪ Put a drizzle of extra virgin olive oil in a skillet and cook the meat over medium heat for about 10 minutes.
It is essential that the meat is well cooked, being white you can not ignore this!
▪ While the meat is cooking prepare the vegetables.
▪ Place any handful of roughly chopped lettuce in the bowl.
▪ Peel the carrots and cut them into strips and place them with the lettuce.
▪ Cut the fennel into small sticks and add it to the carrots.
▪ Take the beef heart tomatoes and cut them into cubes, combine them with the rest of the vegetables.
▪ When the meat is cooked let it rest a couple of minutes before adding it to the salad.
▪ Season with a drizzle of extra virgin olive oil and a pinch of salt.
▪ Chicken and veal salad is ready!
