Ingredients for Veal escalopes with cherry tomatoes and black olives

  • 8veal escalopes (thin)
  • 1 cupcherry tomatoes (200 g)
  • 1 cuptomato sauce (200 g)
  • 1/2onion (50 g )
  • 5 leavesbasil
  • 1/2 cupall purpose (AP) flour
  • 2 tablespoonsextra-virgin olive oil
  • q.s.salt
  • q.s.pepper

Directions

  1. In a large sauté pan over medium heat, add extra-virgin olive oil and minced onion sauté for 1 minute.

  2. Now, add tomato sauce season with salt and pepper, cook on a high flame then add cherry tomatoes and black olives and cook about 10 minutes, stirring occasionally.

  3. Meanwhile, beat the escalopes slightly with a meat mallet, season with salt both sides and coat them with flour, shaking of the excess.

  4. Place the escalopes in the pan, arranging them in the sauce, season furthermore with some extra-virgin olive oil.

  5. Cook covered with a lid over medium heat turn over halfway through cooking.

    Finally add minced basil. Serve warm and be sure to provide a hunk of crusty bread to mop up the sauce.
