Salty Christmas Yule Log

Salty Christmas Yule Log is a nice Christmas eve appetizer idea. Original and very quick, it’s really easy to prepare and versatile too: you can use the ingredients you prefer for the filling. I used my Insalata Russa recipe, because my sons love it, but you can fill it, for example, with spreadable cheese, rocket and salmon; shrimp with Aurora sauce; cheese and ham or salami; tomatoes and mozzarella … anyway it will always be a success!

Ingredients

5 slices sandwich long bread (250 g)
1 cup soft cheese (7 oz – 200 g )
2 tablespoons mayonnaise
17 ounces Insalata russa (500 g)

For Insalata Russa

2 potatoes
2 carrots
2 courgette (zucchini squash)
1 onion
1 stem celery
1/2 cup peas
1 cup mayonnaise (10 oz – 300 g)
3.5 tuna in oil (drained)
2 teaspoons salt

Steps

Using a rolling pin, slightly flatten bread slices shaped into a rectangle. First overlap them slightly from the longer side so they stick together and you can roll them better.

Prepare the Insalata Russa following my recipe here

Spread the Insalata Russa just enough to cover the surface.

Roll the bread from the shorter side making sure to compact it well.

Wrap the roll with cling film and refrigerate for at least 1 hour.

Meanwhile, in a small bowl combine soft cheese with 1 tbsp mayonnaise (or 2 if you like).

Cover the roll with the cream cheese, creating veins with a fork, to simulate the surface of the trunk.

Unwrap log. From one end, cut a slice, slightly oblique, about 3” (7 cm) long, and place it on one side. Arrange the 2 slices on serving plates.

Place in the fridge. Serve cold, decorated with some sprigs of butcher’s broom or as you like.

Storage

Salty Christmas Yule Log can be stored in a closed airtight container in the refrigerator for 2-3 days.
