Ingredients

300 g whipping cream (cold from the fridge)
250 g yogurt (strawberry or white)
250 g strawberries
80 g sugar

Tools

You’ll need:

1 Saucepan
1 Bowl
1 Hand Mixer
1 Cake pan
1 Piping bag

Steps

Prepare the strawberries

First, clean the strawberries , wash them and pat them dry with kitchen paper, remove the stem, cut them into small pieces (they should be, cleaned, about 250 g) and put them in a saucepan together with the sugar; put on the fire and cook for about 2 minutes , turning from time to time.

Then, put them in a bowl, mash them with a fork (you can also pass them a few seconds with the immersion blender) and cool in the refrigerator: if you want to go faster, in the freezer.

Prepare the cream

Meanwhile, whip the cream (very cold) with an electric mixer,

add the yoghurt and mix gently, from top to bottom so as not to disassemble the mixture, and finally add the strawberries, now cold. Keep aside some cream that you will need for decorations.

Complete and decorate

Line a springform cake tin with cling film, pour the mixture, level well and place in the freezer to cool for at least 5 – 6 hours (overnight it is the ideal).

As soon as it has reached the right consistency, remove from the freezer and invert onto a serving plate.

Garnish with tufts of cream, with fresh strawberries cut into small pieces and serve. You can pair the semifreddo with a strawberry salad, simply seasoned with sugar and lemon. Yummy!

Storage

You can store the Strawberry and Yogurt Parfait in the freezer for about a month, closed in an airtight container or covered with plastic wrap.

Tips

– Strawberries play the starring role in this recipe, so make sure the ones you get are juicy and sweet.

– You can use double cream/heavy cream or whipping cream: make sure it is cold before whisking and keep it refrigerated until you need it.

– You can make this dessert with other fruit too: use raspberries, blueberries or any berries that are in season in place of the strawberries. Yummy!
