Here’s a cake that brings me straight back to my childhood: the Soft Marble Cake. Soft and with a moist consistency, it is the perfect dessert for breakfast or a snack, to be paired with a cup of cappuccino or tea.
Contrary to what you might think, it is a cupboard cake that is quick and easy to prepare.
I cooked it in a silicone mold with this particular shape, I really like it, but if you don’t have one, a donut mold with a zipper is also fine, so it’s easier to unmold.

First, heat the oven at 180°C, in ” static ” mode.
Place the eggs with the sugar in the planetary mixer and whip them at maximum speed for about 10 minutes, until the mixture is soft and fluffy. If you prefer, use electric whisks.
Once the time has passed, reduce the speed of the mixer and gradually add the milk , the oil, and finally the flour and the yeast; mix the mixture well with a spatula so as not to cause it to fall apart. You should obtain a soft and homogeneous dough .

At this point, take a little more than 1/3 and place it in a bowl, add the bitter cocoa and mix well.
Into a Silikomart silicone mold , first pour the light mixture, then the cocoa one, alternating the two colours, until the mixture is used up.
If you use a silicone mold, there is no need to butter and flour it: once cooked, the cake comes out very well, without breaking. If you don’t have one, a ring-shaped cake pan, openable, buttered and floured, is fine too.
3) Cooking
Place in the oven and cook in a preheated oven for approximately 40-45 minutes. It took me 48 minutes.
Cooking times vary from oven to oven. To check for doneness, insert a toothpick into the center of the cake. If it comes out clean, it’s cooked. If it’s sticky and moist, the cake isn’t done yet. I suggest you not to overcook the cake, otherwise it will be dry.
Let the marbled cake cool completely. Once at room temperature, dust with icing sugar .

Storage
You can store the Soft Marble Cake in an airtight container at room temperature up to 3-4 days.
Tips and Tricks
It’s very important to work the eggs with the electric whisk for several minutes, because the more air the mixture takes in, the softer the cake will be. Furthermore, it is always advisable to use eggs at room temperature, if organic even better.
