Smashed Potatoes with Ham and Cheese, rustic and tasty, are perfect as a side dish, paired with a meat or fish dish, but also as a finger food at a buffet, if prepared with small potatoes.
The preparation is really very simple. I boiled the potatoes, then mashed them and seasoned with extra virgin olive oil, salt and rosemary, and I put them in the oven for a few minutes. Then, I stuffed them with grated cheese and diced ham and put them in the oven again, until the cheese melted. Amazing!!!

First, cook the potatoes . Wash them and boil them, with the peel, in plenty of water for
18-20 minutes. If you use a pressure cooker, consider 10-11 minutes when it starts to whistle. Cooking time depends on the size of the potatoes.
Once cooked, let them cool slightly (just enough to avoid burning yourself) and place them on a baking tray covered with baking paper, leaving at least one inch between each of them. Meanwhile, heat the oven on to 200°C , in “fan” mode.
Using a small-bottomed glass (or a small cup), smash the potatoes, remove the peel from the surface, drizzle with extra virgin olive oil, season with a little salt and
rosemary and bake in a preheated oven for approximately 7 – 8 minutes .

In the meantime, grate the cheese (I use this electric grater which is also excellent for cutting vegetables) and dice the ham.
Once cooked, remove the pan from the oven and stuff the potatoes first with the
grated cheese and then with the diced ham, sprinkle again with a little oil, a little breadcrumbs, and put the pan back in the oven for 7 – 8 minutes in “grill” mode, until the mozzarella has melted.
