Fried donuts (in italiano ciambelline fritte), so soft, fluffy and delicious, without potatoes in the dough, perfect for Carnival, but also for many other occasions: a birthday party, a buffet, a snack or even for breakfast.
You can find them in bakeries, coffee bars and sweet shops all throughout Italy. They are made with a leavened dough made with water, milk, yeast and flour, without potatoes. First fried in hot oil, then rolled in granulated sugar. The consistency is very soft, airy, and compact. Fried donuts are delicious eaten while still hot and fresh after coating in granulated sugar.
They stay soft for a long time, but the problem is that they disappear fast 😃 In fact, I did not have time to cover them in sugar, that they disappeared from my plate.
They are so good that it is really difficult to resist.

Steps
1) Prepare the dough
First, prepare all the ingredients: remember to take the butter out of the fridge at least 1 hour before starting.
Pour the two types of flour into a bowl, add the dried yeast together with two teaspoons of sugar and mix with a fork. Now add the eggs, butter (it must be soft) cut into pieces, lemon zest, the remaining sugar and milk; mix well.
Transfer the dough onto a pastry board and knead well by hand, leave to rest in a bowl for at least 2 hours, until it doubles in volume. See note 1 in Tips.

Flatten the dough with your hands and roll it out with a rolling pin until it is about
1 – 1,5 centimetres thick.

2) Make the donuts
Now, make the donuts using a 9-centimeter pastry cutter and the tip of a piping bag.

Place the donuts on the baking paper (cut a rectangle for each donut) directly on a baking tray.

and let them rest, covered, for about 30 minutes.

3) Fry the donuts
At this point, fry the donuts in hot oil (around 170°C – 340°F) until golden brown, turning them from time to time.

Dip them, one at a time, into the granulated sugar while hot, nicely coating both sides. Here they are. Fried donuts are ready. Enjoy!

Storage
You can store the fried Donuts in an airtight container at room temperature for 1 – 2 days. If you have any left, I recommend heating them for a few seconds in the microwave to make them lukewarm.

Tips & Tricks
1) As soon as you finish kneading, when you have to let the dough rise for at least 2 hours, you can also put it in the fridge overnight, covered with cling film. In this way, the next day you just need to take it out of the fridge, leave it at room temperature for at least half an hour, after which it will be ready to be used.
2) As soon as the donuts are cooked, roll them in granulated sugar while still hot, so that they are well soaked in sugar.
3) If you want to obtain a well-strung dough, use a planetary mixer.
4) If you prefer, you can replace the granulated sugar with powdered sugar. However, we like them better with granulated sugar.
5) You can use the fried donut recipe to make the classic American donuts, famous from the Homer Simpson television series: just cover the surface with frosting and colored sprinkles.
6) You can also bake the donuts in the oven at 180°C, in static mode, for about 15 – 20 minutes. Be careful when cooking them: they must not brown too much, but be soft and golden.
