Ingredients for Pumpkin and speck pasta
- 11.5 ouncespasta (320 g – rigatoni, penne or other short pasta )
- 1pumpkin (small )
- 1onion (small – thinly sliced – or a shallot)
- 1 stickcelery (thinly sliced)
- 1/2 cupspeck (80 g – or bacon)
- 3 spoonsolive oil
- 1/2 glasswater
Put on a large pot of water to boil for the pasta. Once it starts to boil, add salt and cook the pasta al dente according to the instructions on the package.
Make the sauce
While pasta is cooking prepare the sauce. First wash the pumpkin, remove the peel and cut into small cubes.
Cut the speck (or bacon) into small cubes (or strips if you prefer).
Then peel and finely chop the onion (or the shallot).
Heat the olive oil in a large pan and sauté the onion gently until it starts to soften.
Now add pumpkin cubes and sliced celery and sautè for 1-2 minutes.
After add water, season with salt and pepper and cook covered with a lid for about 15 minutes. Mix well to combine.
Meanwhile, in another pan sauté the speck (or bacon) until crunchy.
Finish and serve
When the pasta is al dente drain it and keep some cooking water aside; if needed add to the pasta. Add pasta to the pumpkin along with speck (or bacon). Mix well and let it go for a few minutes to complete the cooking.
Pumpkin and speck pasta is ready.
