Cheesy au gratin Potatoes recipe is really easy.
First, peel the potatoes (1). Wash them under running water, dry them with a kitchen towel and with a sharp knife cut into thin slices (2). Blanch them in boiling hot water for a few minutes (about 5 minutes). Drain and let them cool (3).
Preheat the oven to 374°F (190° C).
Grease a baking dish (4) with extra-virgin olive oil (olive oil is ok too). Layer sliced potatoes into the baking dish (5), season with salt, sprinkle with oil and add 1/3 of the cubed cheese (6) and grated Parmesan cheese.
Cover with another layer of potatoes and continue until cheese is finished. I made 3 layers.
Pour a drizzle of extra virgin olive oil and bake in a preheated oven and let them brown for about 10 minutes, until cheese has melted and the top is golden brown. Remove from the oven and serve hot.
