Cauliflower and Potato Bites, tasty vegetarian bites perfect for a brunch or appetizer. The potato and cauliflower mixed together create such a scrumptious bite, with a soft burst of cheese inside: pop one into your mouth and you won’t stop eating them.

I had a cauliflower in the fridge, waiting to be used, but someone in my family doesn’t like it so much. Anyway I wanted to give it another try so I decided to prepare these delicious Cauliflower and Potato Bites, with a stringy cheese heart.

I baked them in the oven, but you can also choose to cook them in an air fryer or directly fry them. I’m always looking for tricks to get my sons to eat vegetables and this recipe is perfect: they loved them and asked me to prepare them soon again. 😉

Ingredients

1/2 cauliflower (6 – 7 florets)
2 potatoes (medium size)
1/2 cup parmesan cheese (grated – 50g)
1/2 cup scamorza cheese (50 g)
4 sprigs parsley
1 egg
1 teaspoon salt
q.s. pepper
q.s. bread crumbs

Steps

Cauliflower and Potato Bites is a very easy recipe.

First clean cauliflower, divide it into florets (I used 6 – 7 florets), wash and boil in a pot with boiling water. You can also choose to steam it.

Meanwhile, put the potatoes in a pressure cooker and boil them for about twenty minutes.

Once cooked, peel them, pass them in a potato masher and place in a bowl to cool; then add the egg, parmesan

cubed scamorza cheese (or a similar cheese) and chopped parsley. Season with salt and pepper.

Mix well all the ingredients

and form the bites

Roll them in breadcrumbs, lay on a baking sheet covered with parchment paper and bake in a preheated oven at 356°F (180 ° C). Bake until golden brown.
