Broccoli and Potato Flan

Broccoli and Potato Flan is a healthy and tasty second course. Perfect as a vegetarian main course or as a side dish for other main courses.

I don’t like broccoli so much. It is just a type of vegetable that I avoid as much as possible, but I know that they are good and healthy so every now and then I try to include them in our daily menu. But the broccoli and potato flan, on the other hand, also satisfies the palate of those who, like me, do not like this vegetable very much.

Cooked in this way it is really tasty: seeing is believing !!! Even my sons liked it.

The recipe is for 2 large portions. If you want to increase the dose, double the ingredients.

Ingredients

For 2 people

300 g potatoes (10oz)
150 g broccoli (6oz)
1 egg
50 g parmesan cheese (grated)
3 tablespoons bread crumbs
1 mozzarella (or your favorite stringy cheese)
olive oil
salt
pepper

Broccoli and Potato Flan recipe is easy to make.

First of all, wash the potatoes. Put them in a large sauce pan and cover with lightly salty cold water. Bring to boil and let them cook for about 25 – 30 minutes (when the water begins to boil). Cooking time will vary depending on how many potatoes and size of pieces.

If you use a pressure cooker, consider 12 minutes from the moment it starts whistling.

Once cooked, peel them, mash them in a potato masher and place them in a bowl to cool.

Meanwhile, clean broccoli and boil them in boiling salted water for about 9 – 10 minutes. Once cooked, drain for a couple of minutes.

Pre heat the oven at 350°F (180° C).

Mash the broccoli in a potato masher to obtain a purée. Add the mixture to the potatoes (1), then add grated parmesan and the beaten egg. Season with salt and pepper, mix well with a fork (2).

Cooking

Grease a baking tray and sprinkle the bottom with 2 tablespoons of breadcrumbs (3). Make a layer with half of the broccoli and potato mixture then add a layer of sliced mozzarella (4).

Cover with the remaining mixture (5), add a drizzle of oil and sprinkle with breadcrumbs (6).

Bake at 180 ° C for about 25-30 minutes and until golden brown, then the last 5 minutes in grill mode. Here it is. Broccoli and Potato Flan is ready.
