Baked peaches with amaretti

Baked peaches with amaretti is a delicious spoon dessert, typical of my region, Piedmont in Italy, excellent after a meal. A great dessert that is so quick and simple to make, but it’s simply delicious! We love it.
For an excellent result, choose yellow or white peaches (nectarines are fine): they should be ripe enough (but not too much) so you’d be able to remove the stone easily.

Serve them warm or at room temperature with or without a scoop of vanilla ice cream or mascarpone. 😋

Ingredients for 4 people

  • 5 gpeaches (ripe)
  • 1/2 cupamaretti biscuits (70 g)
  • 2 spoonssweetened cocoa powder
  • 1 teaspoonbutter (for the top of each peach – for a softer filling)
  • 1/2 coffee cupamaretto (liqueur)

Preparation

  1. Baked peaches with amaretti are very easy to make.

  2. Preheat a static oven to 350°F (180°C)

  3. Let’s start by peeling the peaches. Cut them in half along the natural line of the fruit and run a small knife all the way around.

  4. Extract the stone and with the help of a teaspoon, slightly scoop out some of the pulp (about a teaspoon) from each half, enlarging the cavity. Reserve the pulp.

  5. Place the pulp obtained into a board and chop it finely.

  6. Grind the amaretti in a food processor to fine crumbs (or do this by hand) and add them to the pulp, together with the sweet cocoa. Mix well.

  7. I prefer sweet cocoa to bitter cocoa: in this way I avoid adding sugar.

  8. At this point, if you want, you can add a the liqueur. When I prepare them for my children, I avoid adding it.

  9. Mix well.

  10. Lay the peaches cut side up in a baking tray, lined with baking paper.

  11. Spoon the filling into the peach cavities, as evenly as possible.

  12. Dot the tops with butter and bake peaches in a preheated oven for about 35-40 minutes. It depends on the size of the peaches.

  13. Note that if they are very ripe, it will take less time.

  14. Transfer them to a serving dish and behold, the stuffed peaches are ready.

Conservation

I don’t think you’ll have any peaches left, they’re so delicious, but If you left some, store them in an airtight container in the fridge up to 2 or 3 days. And moreover, if they rest overnight, they will get even more tasty.
