Valentine cupcakes

Valentine cupcakes are light, soft and moist at the right point. Simply decorated with a water glaze and delicious sprinkles. If you like a thicker glaze, replace it with the butter one. These cupcakes stay as fluffy as freshly baked even the next day. They are a really nice idea to give for Valentine’s Day to our sweetheart.

Ingredients

For vanilla cupcakes n°12

2 cups flour
1/2 cup sugar
2 eggs
1 cup yogurt
1/2 cup coconut oil
1 pinch salt
1 vanilla bean

For icing

1 cup icing sugar
water
gel dye
sprinkles

1 Whip
1 Spatula
12 Muffins Tins

Steps

Preheat the oven to 350 ° F (180 ° C). In a citole combine all the dry ingredients sugar, flour and salt. While in another liquid ones including vanilla seeds. Beat the liquid ingredients with a whisk to mix them. Pour them into those buckets and mix with a spatula. With a spoon fill the cups 2/3 full. Cook in a hot oven for about 15-20 minutes. Remove from the oven and leave to cool. Meanwhile, prepare the glaze. Put the icing sugar in a bowl. Gradually add the water, just enough to make the mixture soft but not liquid and a few drops of gel dye. Mix with a whisk to remove any lumps. Glaze the cupcakes and decorate immediately with the sprinkles. Leave to dry for a couple of hours.
