Valentine’s cupcakes are the perfect dessert for Valentine’s Day, anniversaries or any special occasion. Simple but effective and they are also very soft and moist inside thanks to the yogurt in the dough.

Whip the butter with the sugar and the grated rind of the lemons with electric whisks or in a planetary mixer. When the mixture is swollen and frothy, add one egg at a time. Add the yogurt and mix well. Add the sifted flour with the baking powder and finally the lemon juice. Pour into cups and bake at 356°F (180°C) for 15 minutes. Remove from the oven and leave to cool. Whip the cream with two drops of pink colouring. With a sac à poche decorate the cupcakes. Keep in the fridge.

Cook’s tips
You can enrich the cupcake dough with candied lemon zest.
