Today I offer you this delicious sweet and sour tofu. A dish with a balanced flavor and a crunchy texture on the outside and soft inside of the tofu. A vegan Chinese dish to bring to the table for a tasty dinner. It seems elaborate but it is actually very simple to prepare, just cut the firm tofu into cubes, dip it in a batter prepared with rice flour which will make it crispier and drier. Then we proceed with the frying, as soon as they are golden, transfer them onto absorbent paper. All you have to do is prepare the sweet and sour sauce in which we will then dip our crunchy tofu cubes.

In a small bowl, dissolve the corn starch in the water. In a pan, add the tomato puree, sugar, vinegar and soy sauce. Add the corn starch and mix everything with a whisk. Simmer over low heat and as soon as the sauce thickens, remove from the heat.
For batter
Pour the flour and starch into a bowl. Add the salt and the water slowly, mixing with a whisk. Mix well to avoid the formation of lumps.
For tofu
Cut the tofu into cubes and set aside. Wash the pepper and cut it in half, removing the stem and internal filaments. Cut the onion into thin slices and the pepper into cubes. Heat two tablespoons of peanut oil in the wok. Add the onion and peppers. Brown for 7-8 minutes, they must remain firm and crunchy. Remove the vegetables and clean the wok. Then he adds the remaining oil and heat the oil to 170°C. Dip the tofu in the batter and fry in hot oil until golden brown. Drain on absorbent paper. Place the tofu and vegetables in the clean wok, add the hot sauce and heat. Cook on the heat for 5 minutes. Serve hot.
