This shrimp and avocado salad is the perfect preparation for lunch or dinner. It has a tasty taste thanks to the pan-seared shrimp and flavored with lemon juice and zest. I added some grilled courgettes and flavored with fresh thyme, olives and creamy avocado cubes.

Grate the lemon zest and keep it aside. Shell the prawns and rinse them under running water.
Dry them with kitchen paper.
Heat a pan with a spoonful of oil and fresh thyme.
Add the prawns and sauté them quickly for 5 minutes.
Add the juice of 1/2 lemon, season with salt and pepper and remove from the heat.
Leave to cool.
In the meantime, open the avocados, remove the stone and remove the pulp with the help of a spoon, sliding it inside between the peel and the pulp.
Cut some cubes.
In a salad bowl, add the grilled courgettes and avocado, season with the remaining lemon juice and oil. salt and pepper.
Mix gently.
Add the shrimp and olives.
Finally add the lemon zest.
Mix and serve.
Cook’s tips
You can add fresh rocket leaves for a spicy touch.
The addition of toasted dried fruit such as almonds or pistachios is also excellent.
