Italian ricotta pie

Italian ricotta pie is the classic sideboard cake that is suitable for many occasions, breakfast, snack and why not as a dessert after a meal. Prepared with lots of ricotta flavored with cinnamon, lemon and Strega liqueur, it is my family’s recipe that has been prepared for many years.

Ingredients

For shortcrust pastry

21/4 cups flour
3/4 cup unsalted butter
3/4 cup sugar
1 egg
3 yolks
vanilla
lemon flavouring

For ricotta filling

17 ounces ricotta cheese
1/4 cup sugar
2 yolks
1 pinch cinnamon powder
lemon zest
2 tablespoons liqueur

1 Rolling pin
1 Cake pan
1 Bowl
1 Sieve

Steps

For shortcrust pastry

Arrange the sifted flour on a pastry board, add the butter into small pieces and rub the flour and butter between your hands until it is waterproof. Add the sugar, a pinch of salt and continue to work it with your hands. Finally, pour in the egg, the yolks and knead everything quickly. Form a loaf, wrap it in cling film and place it in the fridge for at least half an hour before using it. You can make the pastry with a mixer or even better with a kitchen cutter.

For ricotta filling

Combine the sifted ricotta with the yolks, add the sugar, cinnamon, lemon zest and Strega liqueur. Mix everything until you get a smooth cream.

For finishing

Roll out the dough to 12 inches in diameter. Then carefully transfer the dough to a 9 inc cake pan gently insert it into the cake pan, cut off the excess dough. Fill with the ricotta cream and level well. Roll out the remaining pastry and cut out strips of dough. Decorate the surface of the tart. Cook for 45 minutes at 356°F (180 ° C). Remove from the oven and allow to cool before unmolding.

Cook’s tips

To work better, it is important to let the shortcrust pastry rest for at least 30 minutes in the fridge but if you left it overnight it is better

Recipe variations

To make this Italian ricotta pie more delicious, you can add drops of cocciolato or candied orange acudetti or even raisins to the filling.
