A typical dish of Roman cuisine, the chicken with peppers is rich in flavor and succulent. A second summer dish to be prepared with fragrant and fleshy seasonal peppers where an excellent sauce is created and the “shoe” with good fresh bread is a must.

Steps
Wash and dry the peppers.
Cut them into strips 2-3 cm wide.
In a pan, add 4-5 tablespoons of oil and the poached garlic clove.
Heat up and add the peppers.
Close with a lid and cook over high heat for 15 minutes.
After a few minutes, add the salt.
Turn often to make cooking homogeneous.
If necessary, add a ladle of hot water.
In the meantime, divide the chicken into pieces and wash it carefully under running water.
Dry it well with kitchen paper.
In a saucepan, add a few tablespoons of oil and heat.
Add the chicken and brown it well over high heat and cover with a lid.
Turn it on all sides and once well browned, deglaze with the white wine.
Without the lid, let the alcohol evaporate well.
When the sauce created with the wine has reduced add salt and pepper
Mix well and then add the peeled tomatoes previously passed through a vegetable mill.
Season with salt and pepper, close the lid and cook for 15 minutes on a low flame.
Add the peppers and cook for another 10 minutes.
Also serve warm with good fresh bread.

You can also prepare this dish using only chicken things.
Excellent flavored with fresh basil.
Variations
In summer you can use fresh tomatoes taking care to remove the skin. Just scald it for 10 seconds in boiling water after making a cross cut on the tomato. This procedure will allow you to remove the tomato skin.
