Creamy penne alla vodka

Creamy Penne alla vodka is a very popular first course in the 1980s both in Italy and in the United States which was offered to disco customers and is still a typical dish of Italian-American cuisine today. Penne alla vodka are seasoned with a sauce based on cream, tomato and vodka, but some versions like the one I propose today include onion and bacon. The exact origin of this recipe is not yet known, there are several claims on the paternity of the recipe. 8 ounces penne rigate
5.2 ounces pancetta
3/4 cup heavy cream
1 onion
1/4 cup vodka
1 tablespoon tomato paste


1 Knife
1 Pan
1 Pot


Boil a generously salted pot of water for the penne and cook it al dente according to package directions.

In the meantime, chop the onion and fry it in a pan with the diced bacon. After a few minutes, add the tomato paste and blend with the vodka. Add the cream and season with salt.
Drain the pasta with a slotted spoon directly into the sauce.
Sauté and serve immediately. Add some grated parmesan to taste.

Cook’s tips

Bacon can be omitted.

It is advisable not to boil the cream.
