Christmas cupcakes

Christmas cupcakes are delicious vanilla cupcakes decorated with white chocolate ganache. These sweets are excellent to bring to the table on a thousand occasions, as a dessert at the end of a meal or for afternoon tea

For vanilla cupcakes n° 12

2 cups all purpose (AP) flour
2 eggs
1/2 cup sugar
1 cup milk
1/2 cup unsalted butter (melted)
1 pinch salt
1 vanilla bean

For white chocolate ganache

3/4 cup white chocolate
3/4 whipping cream


2 Bowls
1 Spatula
1 Whip
12 Muffins Tins
1 Piping bag


For vanilla cupcakes

Preheat the oven to 356°F (180°C). In a mixing bowl combine all dry ingredients sugar, flour and salt. While in other liquids including vanilla seeds. Beat the liquid ingredients with a whisk to blend them. Pour them into those buckets and mix them with a spatula. With a spoon, fill the glasses 2/3 full. Bake in a hot oven for about 15-20 minutes. Remove from the oven and leave to cool.

For white chocolate ganache

Heat the cream in a saucepan or in the microwave until boiling. Add the chopped chocolate and mix with a whisk until a homogeneous mixture is obtained. Cover with food film and let it cool first at room temperature and then overnight in the refrigerator. After resting, whip with an electric whisk. Place the ganache in a piping bag with a star nozzle. Decorate cupcakes.


Cook’s tips

Chocolate ganache can also be used to cover cakes, fill pies and as a filling for chocolates.
