Apple whole wheat cake is prepared without butter and milk, but only with oil and warm water. The warm water makes it very soft. Excellent for breakfast or as a snack with a good cup of tea, but also as a dessert accompanied by a good custard or vanilla ice cream. This cake is suitable for all lactose intolerant people and is very simple to prepare.

In a bowl, grate the lemon zest and set aside. Peel the apples and cut them into thin slices. Place them in a bowl and moisten them with the lemon juice. In the bowl with the lemon zest, shell the eggs and beat them with the sugar and a pinch of salt. Beat with an electric mixer at maximum speed until the mixture is light and frothy. Lower the speed of the whisk to minimum and add the oil in a drizzle. Add the flour alternating with the warm water, always mixing with the whisks. Finally, add the banking powder. Pour the mixture into an oiled and floured 8.66″ (22cm) mold. Arrange the apples on the cake and decorate with the chopped dried fruit. Cook at 356°F (180°C) for approximately 30-40 minutes bake at 180°C for 30-40 minutes. Do the toothpick test. Remove from the oven and let cool. Remove from the mold and decorate with powdered sugar.
Cook’s tips
You can also flavor the apples with cinnamon and let them macerate for a couple of hours.
