Almond cookies

Today I propose you some delicious almond cookies, soft and tasty. These cookies are made with rice flour and almond flour so they are naturally gluten free. Furthermore, it can’t contain therefore also suitable for those who don’t consume dairy products. Almond cookies are great for breakfast, but also with tea and coffee.

5.29 ounces rice flour
2 eggs
3.52 ounces sugar
3.52 ounces sunflower oil
1 tablespoon baking powder for sweets
4 drops almond flavouring

In a bowl, shell the eggs, add the sugar, oil and the drops of bitter almond. Mix well with a whisk until a smooth and homogeneous cream is obtained. Add the flours with the yeast and knead. Form a loaf, the consistency will be soft. With your hands, take balls the size of a walnut and give the shape of the biscuit. The dough can also be spread between two sheets of parchment paper and cut with cookie cutters. Transfer the biscuits to a baking tray lined with parchment paper. Add an almond for each biscuit. Bake in a preheated static oven at 345 ° F (175 ° C) for 20 minutes or until colored. Remove from the oven and leave to cool.

It’s essential that all ingredients are at room temperature.

If you can’t find almond flour, you can make it at home by blending the almonds finely.
