Mashed sweet potatoes an excellent side dish that goes well with almost any dinner, chicken, fish, beef or pork. The mashed sweet potatoes is made simply with milk, Parmesan butter and nutmeg, like the classic mashed potatoes. I flavored with fresh chives which gives that extra flavor and extinguishes the sweetness of sweet potatoes.

Wash and peel the potatoes, cutting them into pieces about 1-2 inches. Place the potatoes in a large pot and fill with water to cover the potatoes. Cook for about 20 minutes or until the potatoes are tender. When the potatoes are ready, drain and mash them directly in the pot. Add the hot milk with the nutmeg, salt and pepper. Cook again, stirring constantly until the mixture is creamy and smooth, and everything is incorporated, about 5 minutes. Remove from the heat and add the Parmesan and butter, mix and serve immediately with fresh chives chopped.
Cook’s Tips
To prepare this dish in advance, simply boli the potatoes, mash them as an indicator in the recipe and pour them into the greased pan. Cover and maximum refrigerate the dish for a 24 hours.
