4 eggs
4 cups flour (500 g)
3/4 cup sunflower oil (170 g)
1 cup sugar (200)
1 teaspoon baking powder (5)
1 vanilla bean
1 lemon (zest)

Steps

In a bowl, beat the eggs with the sugar, lemon zest and vanilla . Add the oil and mix well until you get a smooth cream. Gradually add the flour and knead. If necessary, decrease or increase the flour, as it depends on absorption. Form a loaf and wrap it in cling film. Let it rest in the fridge for a couple of hours before use. Dust the work surface with flour and roll out the dough to a thickness of 3-4 mm. Form the biscuits with the cookie cutter. Arrange them delicately on a baking sheet lined with parchment paper and bake in a preheated oven at 338°F(170 ° C) for 20 minutes. Remove from the oven and allow to cool, then fill with the jam and sprinkle with icing sugar. They can be kept in a closed box for 4-5 days.
