To make the cookies first sift the flour with the baking soda and salt into a bowl, mix.
Chop the pistachios coarsely with a blender and the white chocolate with a knife.
In another bowl put the brown sugar and butter in pieces at room temperature, mix with electric whips at low speed, add the egg.
Pour in the flour, in several times. When you have obtained a homogeneous mixture turn off the whips and with a spatula add the chopped white chocolate and pistachios, mix everything.
Prepare a baking sheet lined with parchment paper. With a spoon form small balls with the mixture and place them spaced out on the baking sheet.
Bake the cookies in the preheated oven in static mode at 170 ° C for about 25 minutes. Take the cookies out of the oven and let them cool on a tray before enjoying them.
The blueberry and pistachio cookies will keep in a tin box for up to a week.
