First of all start preparing the shortcrust pastry, you can also prepare it the night before, the important thing is to cover it with plastic wrap and leave it in the refrigerator.
Pour the soft butter in the bowl, add the sugar the cinnamon powder and salt, work little with your hands add the eggs , always work quickly.
Finally add the flour, remove from the bowl and bring the cake base on the work surface to form a ball.
Cookies composition
Heat oven to 350°F. Line baking sheets with baking paper for baking. On floured surface, roll out dough to 1/8-inch thickness. Cut with a 3-inch star-shaped cutter. Using a 1-inch star-shaped cookie cutter, cut out the star in the center of half of the cookies. On the cookie sheets, place the 3-inch cookies with a 1-inch part. Place the small stars on a separate baking sheet. Bake cookies 10 minutes.
Remove and cool completely.
Heat the apricot jam in the microwave for a few seconds.
Spread about 1 teaspoon of jam on each 3-inch cookie.
Place the smaller cookie on top and add more jam in the center.
Sift the powdered sugar over the cookies.
Serve at the table.
You can substitute apricot jam for my homemade apple custard.
