Heat a tablespoon of olive oil in a non-stick pan and as soon as it is hot pour in the vegetables cut into strips, cook keeping the vegetables turned with a wooden spoon for 10 minutes or until soft, add the soy sprouts stirring.
Add the two tablespoons of soy sauce. Cook for 5 more minutes, turn off the flame and let cool completely.
As soon as the vegetables are cold, unroll the roll of phyllo pastry, cut each sheet into 4 pieces, put a spoonful of filling into each piece of pastry and close it like a bundle.
Seal the edges with water
Heat the air fryer for 2 minutes.
Spread three spring rolls in the basket.
Bake two minutes at 350° F (180° C).
Keep in mind that cooking times are approximate as they depend on the model of your air fryer.

Remove them with the help of a ladle. The rolls are ready to serve immediately warm.
