Preparation Roasted Pumpkin Recipe
Preheat the oven to 200° Celsius / 400° Fahrenheit.
Prepare the spice mixture:
The spice blend can be modified to suit your taste or needs of the moment, We have used this:
3 spoons olive oil + 1 teaspoon dried thyme + ½ teaspoon dried rosemary , 1/2 teaspoon dried thyme, 1 teaspoon of dried basil, salt and pepper to taste.
Place the olive oil in a bowl with the finely chopped spices, add salt and pepper to taste.
Wash and dry the pumpkin it is not necessary to peel it
Cut the pumpkin into wedges, about 1,5 cm thick, keeping the skin, lay them on a baking sheet.
Now coat the pumpkin wedges with the prepared marinade.
Roast for about 15 to 20 minutes until the wedges are as soft as you like. You might start checking as early as about 10 minutes.
This squash can be served as a main dish or as a side dish for chicken.
Roasting in the oven is probably the best cooking you can do to a fresh pumpkin, as it enhances its flavors and gives it a smooth and creamy texture.
