4 cups flour (All-purpose flour** (plus extra for dusting) 500 g)
1/4 cup sugar (50 g)
2 teaspoons active dry yeast
1 teaspoon salt
1/2 cup water (140 g)
2 eggs (120 g)
1/4 cup unsalted butter (50 g)
1 pound custard (500 g)

4 cups vegetable oil (1 liter)

Before you start
First , check the instructions on the yeast package. Some yeast can be mixed directly into flour, while others must be activated in a warm liquid. If your yeast requires activation, do it in a portion of warm water (do not add more liquid)..

Put the flour, salt, and sugar in the bowl of the planetary mixer. Mix briefly to combine.
Add baking powder and water then eggs, mix.

This will take about 10 minutes. The dough should become smooth, elastic and slightly sticky.
Transfer the dough to a clean (non-floured) surface and knead it gently 2-3 times until it forms a smooth ball.
Place the dough in a bowl and cover it with plastic wrap. Let it rise for 2-3 hours or until it triples in volume.
Once the dough has risen, turn it out onto a floured surface flatten the dough with a rolling pin , until it forms a rectangle about an inch and a half thick.
Form two folds, flatten again and two more folds, let rest 10 minutes.
Now form a rectangle again and use a pastry cutter or glass to cut round doughnuts. The scraps you then fry them without reshuffling.
Let rest 1 hour

Heat sunflower or vegetable oil in a deep pan to about 170°C/337°F.
Carefully dip each doughnut into the hot oil,
Fry each doughnut for about 2 minutes on one side, turning often.

Transfer the fried doughnuts to kitchen paper to drain briefly. Let them cool before filling them with custard placed in a pastry bag and then cover the surface with powdered sugar
