Spiced cookies

2/3 cup brown sugar (150 g )
1/8 teaspoon baking soda
4.2 ounces unsalted butter (120 g )
2 cups flour (250 g all purpose flour)
1/8 cup water (30 g)
1 pinch nutmeg (powdered )
1 pinch black pepper (ground black pepper)
1 pinch cloves (powdered cloves)
2 tablespoons cinnamon powder (10 g)

Steps Spiced cookies

To prepare these cookies , we place the flour and cold chopped butter in a blender.

Blend until a sandy consistency is obtained

Place the resulting mixture on a work surface create a classic fountain shape and add the brown sugar and mix

Add all the powdered spices and baking soda and mix

Also pour in the water and knead with your hands

Until you get a firm dough ball it will take a minute.

Wrap it in plastic wrap and let it rest in the refrigerator for at least 6 hours for the spices to release their aroma.

After this time has elapsed, take the loaf, and roll it out on a floured surface with a rolling pin

Obtain a sheet of dough about 1.5 inches, thick.

Now with a cookie cutter with a diameter of 1.5 x 1.5 inches, cut out the cookies

Use all the dough, about 40 pieces. Arrange the cookies on a baking sheet lined with baking paper.

Bake them in the oven at 356° F ( 180° C ) for about 20 minutes.

Take the cookies out of the oven and let them cool completely.
