Lentils served in parmesan bowls

This Italian lentil recipe is one of those pocket recipes that I find myself using again and again because it requires super-basic ingredients that we almost always have on hand. Great during the holiday season because once the lentils are cooked and tender, they are served in containers of parmesan waffle
It is one of those simple recipes that somehow always tastes better than we remember and, bonus, it is also a great leftover the next day.

2 cups lentils
2 carrots
1 onion
2 stems celery
2 tablespoons tomato sauce
1 cup vegetable broth
1 cup parmesan cheese
salt

To start we need to soak the lentils in cold water for about 4- 6 hours, you can prepare them in the evening if you have a chance to cook them in the morning changing the water at least 2 times.
Clean and peel the carrots and an onion and then chop them up by adding a celery stalk to the blender, having first taken out the leaves, blend very finely.
In a frying pan pour a tablespoon of oil and brown our mince adding if you like some chili or Italian spices.
Cook while stirring and then add two generous tablespoons of tomato sauce.
Rinse the lentils and add them to the mince, cover the lentils with the hot and salted broth, prepared earlier, as soon as it dries add more a little at a time until they are cooked just right in total about 20 minutes do not let them dry out too much.
Meanwhile prepare the parmesan waffles.
For an excellent output of the Parmesan Baskets you must have a perfect nonstick pan.
Cut squares out of baking paper and spread two spoonfuls of Parmesan cheese on top, giving it a round shape.
Place the disk in the hot nonstick pan.
Let the cheese melt evenly and helping yourself with a paddle turn over after about a minute and remove the baking paper.
To make them into a basket shape transfer them immediately while still very hot to a glass and shape them with your hands, be careful that they are hot.
