These decorated Easter biscuits are one of my favourite cakes! The design is simple but so cute and sweet.

To prepare the pastry
We put in the planetary flour, butter well cold cut into pieces with a pinch of salt and crumble everything with the machine. We join the eggs and sugar.
If we do not have a machine you can also do it by hand by joining the center of the flour to a fountain on a work surface eggs, butter a pinch of salt, and sugar.
Knead everything quickly until it forms a ball, the dough must always remain cold.
We form a ball that we will wrap with plastic wrap and put to rest in the refrigerator for 30 minutes before being stretched.
Preheat the oven to 350° F (180° C).
Roll out the shortcrust pastry with a rolling pin, about 0.15 inches ( 4 mm ).
Use Easter-shaped biscuit moulds (rabbit, egg, bell…). Place them on a baking tray with baking paper.
Bake the cookies for 10 minutes.
Turn off the oven and remove, let cool completely.
For the glaze:
To prepare frosting, beat egg whites with powdered sugar on high speed until white and glossy continue for 1 minute.
Divide the frosting into 4 parts. One part will remain white while the others add food color.
Transfer the icing to a piping bag or ziplock bag with a small corner cut-out. If you’re using a sac à poche, any small round tip will work.
Now decorate the biscuits as you like.
Use the frosting immediately to color the cookies then allow to dry completely before consuming.
Even if you’re not a big cook, these are easy to make, frosting and all.
These cookies are perfect for the little ones too. You can make the cookies and frosting ahead of time, roll up your sleeves and throw a big party to decorate the cookies.
They keep 4/5 days even out of the fridge if the temperature in the house isn’t high!
